Entering the profession at 18 without formal training, David learned on the job before spending a year in Japan to expand his horizons. Back in France, he earned his diplomas and became pastry chef de partie, later teaching at a vocational school where he discovered ice sculpture. He then taught in China for two years before joining La Glacerie Paris and the Notre-Dame de la Providence school in Orchies. Now co-founder of Astral Glace in Lille, he also works as an international consultant and brand ambassador for Louis François and Prova. French Ice Sculpture Champion in 2021 and 2022, he was named Meilleur Ouvrier de France Glacier in 2023.
