Step 1 : cast the transparent sugar (about 2cm thickness) into the handmade mould (rectangular vinyl), as it can be seen from the 3rd pictures; wait for 10 minutes then sprinkle different color of crushed sugar ( the sugar color that I used is dark green, light green, silver and green with gold). On these pictures, sprinkle different color of crushed sugar on the transparent sugar to create a glass-granite effect.
Step 2 : Leave to rest for approximatively 30 minutes then put it into the oven (80’c, approx. 20 minutes).
Step 3 : When the sugar has become soft, take it out from the oven and remove from the vinyl and fix it to the sugar pump.
Step 4 : Pump some air into the sugar to create a hollow effect but make sure it’s not too thin as if it’s too thin it will lose the glass effect because the transparent sugar becomes too thin.
Step 5 : Finally, when the sugar starts to get a little bit firm, start to shape it into a snail’s shape. The important part is to shape it whilst it’s setting as it will be very difficult to control if it’s too soft.
