WEI LOON TAN, GOLD MEDAL 2019, SHARES ITS TECHNIQUES FOR THE SUGAR SNAIL RECIPE!
Around the contest

Find the step of the recipe :

Cast the transparent sugar (about 2cm thickness) into the handmade mould (rectangular vinyl), as see from the 3rd pictures; wait for 10 minutes then sprinkle different color of crush sugar (the sugar color that I used is dark green, light green, silver and green with gold).

Sprinkle different color of crush sugar on the transparent sugar to create a glass-granite effect.

Let it set for about 30 minutes then put it into the oven (80’c, about 20 minutes).

When the sugar became soft, take it out from the oven and remove from the vinyl and fix it to the sugar pump.

Pump some air into the sugar to create hollow effect but make sure it’s not too thin as if it’s too thin it will lose the glass effect because the transparent sugar becomes too thin.

Finally, when the sugar get a little bit firm, start to shape into snails shape. The important part is make sure shape it while it’s start to set as it will be very difficult to control if it’s too soft.
