National Selection

This is the first time that a national selection round is organized by GL events in Brazil, the official organizer of the finale in Lyon. The competition will take place during Sirha Rio, on October the 14th 2015 in Rio de Janeiro, Brazil - Centro de Convenções Sul América.

This national selection is the first step for Brazil to participate in the final of the Coupe du Monde de la Pâtisserie 2017 in Lyon. Four candidates will fight amongst each other's and the two winners will compose the Brazilian team which will participate to the Copa Maya, Latin America selection in Mexico in 2016.

The four candidates are divided into two categories.

Each candidate must realize (depending on his category):

  • Sugar category
    • 2 frozen fruit entremets
    • 2 chocolate entremets
    • 1 sugar artistic creation
  • Chocolate category
    • 2 frozen fruit entremets
    • 8 plate served desserts including chocolate
    • 1 artistic chocolate creation

Then, the Jury members will taste their desserts and proceed to the scoring, according to specific criteria.

Candidates have 6 hours to produce their desserts in front of an enthusiastic public composed of professionals and supporters!
