What is the cake of your childhood ...?

The Pithiviers cake. The Pithiviers is a traditional French cake that is based on the almond cream that is made in the French village of Pithiviers.
The puff pastry from Pithiviers is the most famous. It is similar to the cake of the twelfth night (galette des Rois) that can be found in the north of France.

Today, what is the biggest challenge of your work?

Maintain high quality due to the production volume we have.

What do you think about the "health" aspect in bakery and pastry?

These are trends that are just beginning to become global. I think the impact is already very large and will grow more and more. No doubt an opportunity to grow the business in that direction. I think there is a worldwide tendency to consume less sugar but this opens the doors to explore the alternative pastry and this causes a significant growth in my country in this segment.
