Selections
Considering the multiplication of nominations, the International Organizing Committee of the World Pastry Cup has established international selections, to open the Contest to new countries and offer even more emulation:
Open de France de Desserts : After 20 years of success, the World Pastry Cup continues its discovery of nations little known on the international pastry scene. Open to all countries, the "Open de France de Desserts" was established two years ago for this purpose, but also to promote and highlight the expertise of Pastry, Ice and Chocolate work throughout the world. A willingness by Gabriel Paillasson, president and founder of both competitions, and the Organizing Committee. This contest has the ability to mobilize additional countries. In 2008, 5 nations were represented.

Copa Azteca : Organised every two years, the Copa Azteca selects 3 Latin American countries to participate in the World Pastry Cup. It takes place at the Salon Abastur in Mexico City and will be held this year from 9 to 11 September.
Asian Pastry Cup : Created in 2007, the "Asian Pastry Cup" takes place in Singapore as part of the show "Food Asia" and opens its doors to many Asian countries. Organized by Ravifruit, Valrhona and Singapore Chefs Association, this contest gathers together the best pastry chefs from all over Asia. It qualifies 3 countries to the grand final in Lyon. However, this year, judges have exceptionally decided to select 4 teams to participate in the World Cup of Pastry 2009: Singapore, Taiwan, China and Malaysia.
